Also known as carbonated water, soda water is a very popular form of beverage which is
enjoyed by one and all. Since the earlier times, many civilisations became interested in the natural water springs which were enriched with vital minerals, especially the ones infused with carbin dioxide. It was belived that these minerals have natural healing properties and is very beneficial for the body metabolism.
Consequently many chemists sought to produce this effect in water in a man-made
manner. It was Joseph Priestley (an Englishman) and Torbern Bergman (a Swedish
chemistry professor) who first invented the water infused with carbon dioxide.

This soda water is actually carbonated water consisting of carbon dioxide in a dissolved form. It is also known as seltzer water or sparkling water. Priestlley discovered this when he suspended a water bowl over a beer vat. The fermented beer gave rise to a blanket of air which when infused or mixed with water gave it a unique taste. He found the taste of the water amazing and gave it to all his friends. This is how the first carbonarted water originated. He made other subsequent experiments with carbonated water, leading him to publish a paper titled : Impregnating Water with Fixed Air. Gradually becoming popularised, he began to be considered “the father of the soft drink”.
Over time, the manufacturers of soda water began to add flavours to it so as to distinguish the taste of the water. Since sodium salts were mostly prevalent, these drinks began to be known by the name of soda water. It began to be accepted as a social drink and when infused with various flavours of cocktails, people began to enjoy the drink like nothing else.
The father of soft drinks was Jacob Schweppe, a person of German-Swiss origin. Jacob
began to make himelf familiar with the findings of Priestley like his method of making
carbonated water. After a lot of calculation, he himself discovered a way of making
carbonated mineral water which proved to be commercially and economically viable. It is this procedure which ultimately led to the manufacture of the commercial soda water.
Modern day soda waters are made by injecting the carbon dioxide to the water udner
pressure. This pressure increases the solubility making it possible for more amount of
carbon dioxide to be dissolved than could be done under the normal atmospheric pressure. When the bottle is slowly opened, the pressure gets released, and the gas exits
from the solution completely. This is why small bubbles are formed.
